Forgive me, im not a sailor so this question may sound stooopid. In million dollar yacht races like syd to hobart, volvo 70 and america's cup the yachts are all single hulled, yet state of the art 60 ft trimarans are achieving 40knts + in the open ocean and circumnavigating the globe in 57 days. So why has a switch not been made to these boats?

The answer is fairly straightforward - it is because if the race featured the trimarans of your example then it wouldn't be a monohull race 
The aim is not simply to go as fast as is possible using any possible format. The aim is to extract the most speed out of a particular format. Otherwise, we'd give up sails, bolt rockets onto those 60' trimarans and go even faster! 
Of course, nothing prevents a bunch of 60' trimarans getting together to race each other (would be pretty exciting stuff, really).
Thanks maxm. That makes sense. I guess i must have assumed that the famous/prestigous races marketed themselves as the quickest using sail power.
