I'll probably cop it for this, but I bought an older Volvo v70 this year and the space inside is fantastic, but it is a volvo, so expect a ribbing. However, they're cheap, generally have low kms (mine has 108k for a 2000 model) and genuinely have only been driven by little old ladies.
I can happily sleep in mine (board has to lie under the car while I do this)
In your position I'd definitely go a Commodore VY series 2 (the 3.8 is much simpler and easier to work on than the 3.6 in the VZ and the VE).
Vans are awesome though if you've got the budget.
And yes, if you leave windsurfing kit permanently inside a car it does tend to wreck it. Salt water is very bad stuff. I'm very careful about making sure my stuff is as dry as possible before going in the car, and the Landcruiser gets emptied the moment I get home.
However, for anyone else reading this and wondering about cars I have to add this...
If you're after a proper 4WD as a windsurfing wagon, you can't go past a 100 series Landcruiser. I bought on expecting it to be a real compromise and a total pain for windsurfing, but I could not have been more wrong.
I can get a couple of boards (wave and freestyle) plus five sails, etc etc inside with a passenger (very) comfortably in the front seat. How? Because it's so wide the boards just poke through between the front seats. Also, it is very very easy to put stuff on the roof. You can stand on the tailgate or on one of the rear wheels - because of the shape of the car getting narrower from the body to the roof it's really easy.
A decent one doesn't come cheap but they are amazing cars. I'm planning on driving mine into the ground which should take about another 20 years.

Yup, got one of those too. Being resprayed at the moment, just not that colour. Awesome metro windsurf wagon. Just doesn't quite cut it on the longer drives around WA.
