Here's a couple of videos with some air-to-air footage. The different perspective is very dramatic.

The action in the paragliding video starts at the 2 minute mark.

What gets me is how stable the footage is,

I have a GoPro Fusion 360 camera. It records location and direction and accelerometer readings for every frame. From that it does the stabilisation in software in the ipad or desktop app. Depending on the platform you can stabilise on a subject, a point of view, or anything else you want.

I really like the different perspective caused by the tumbling paraglider looming into the image, and the looping kiteboarder spiralling away from the camera.

This is a video of me with the image stabilised in a specific direction.

What happens if you let go of that handle and can't steer...?

You go straight or you steer by weight shift. It's a very stable glider. It flies just fine by itself.

The technique to recover most mishaps is to "put the brakes up," the same applies to kites but most people don't do it. :-(
