is there any software developer kiting? let's develop one!
imagine choosing your kites and tune up in the garage than a test run... going to famous kite competition beaches like GT... jump over wind surfers!!! to get an extra points could be a suggestion. 
sweet idea, you could even choose from famous riders like Aaron Hadlow, Reuben Lentonect. ect. Make your own rider. Use your analog sticks to control the kite. The possibilitys are endless!!!!
yeah of course sharks and jelly fish attacks and incredibly attractive bikini babe on the beach to distract your concentration! should definitely be a part of the package!!!

but I still suggest freaking sharks and jelly fishes. And don't forget the beach babes! gotta have some fun factors to be a popular public choice...
And what about including major brand kites to get advertising sponsers than charging it to fellow kiters.

i was thinking they should make one for the wii, and if you screw up the little controller needs to pull you though the living room wall , unless you manage to push A + B at the same time , and quick enough....

Thats just a kite simulation app I found, I didn't write it.
And yeah it's a free download, it shows that the basics have already been coded.
I did however find an interesting quote form the creater.
Someone asked him if he would make the source code available.
His reply:
"Someday I hope to write a full kite boarding game, so I don't want to release the source. It is written in Open GL/C++."
So who knows!
Give him time, he has done a sweet job so far! 
Pretty good fun that simulator - just need a board, a little dude, waves, kickers, sliders, a few tropical locations and some bikini chicks - I wish the developer guy would get busy
