I'm looking at painting parts of the inside timber work of the s&s white to brighten things up a bit. It's currently varnished so will be sanding back first.
What's the best paint to use? 2 pack epoxy or just enamel or something better?

Try satin auqua trim from wattyl. It's recoatble in 2 hours and has very little smell.
If you need to prime the surface before painting then Zinsser Smart Prime is the go, you can paint it on without having to sand even on full gloss enamel.

I use zinsser high adhesive primer recoat topcoat in one hour. Crowies paint store is the go if you have them in your state. Use little ripper mohair rollers.

That's a massive improvement. Nice.
We used aqua trim as well, works a treat. Easy to apply and cleans up without a mess. We tinted ours to an off white, almost beige, which worked well contrasted to the remaining stained timber. I love the effect on Southaces boat.
