Im thinking of doing this to an old Futura 122. Application would be low wind freeride foiling, not racing.
is it worth it?

Thats a perfect board. I use the same board but it is the Go board construction with a PowerPlate on the Tuttle finbox. I have foiled it with a 3.7 to a 6.5 and plan to try a 7.3 soon.
Here it is with a Slingy 84cm Infinity wimg and a 6.5 on a light day recently. I have simce done a footpad mod at the back to get a more outboard position, but i like to tinker.

You certainly could do that. I just inspected my board's box the other day and it remains good as new with , based on my gps, easily 270km logged on it over the past 12 months.
Man overboard has done them before. Not sure what the cost is.
I got Adam to deepen my box and reinforce it, he does a great job and boy have I put it to the test
