This last year at 87kg I kept a more accurate log of sails and boards I used, Heres my sail sizes and the percentage of use they got.
2016 Blade 4.2m 7%
2016 Blade 5.0m 27%
2016 Blade 5.3m 24%
2016 Blade Pro 5.7m 42%
15% of the 5.7m usage it was not big enough and I grovelled.
I was surprised how much use my 5.0 got and a bit diappointed how much my 5.7 got as its my light wind sail. I'm not sure if I need to make changes to sizes or are my results a reflection of the wind strengths.
I'm keen to see other nerdy records.

I only need 3 sail sizes where I sail. Wind ranges from 12-25 MPH, and maybe twice a season hit 30 MPH. Wind is primarily 13-16 MPH, so the 6.8 sail is my main user.
Since January of this year:
4.7 HSM QU4D 2012 - used once
5.2 HSM KS3 2013 - used once
5.5 HSM KS3 2014 - used twice
6.1 HSM KSS 2017 - still not wet
6.3 Goya Banzai 2016 - used 4 times
6.7 HSM KS3 2016 - used 14 times
Rest of sessions were on slalom gear on flat water so haven't included those.
Same period last year was in Hawaii so not comparable - did about 180 sessions all on wave gear. Jeepers, the wind in Florida sucks.
Interesting, so far only responses are from the U.S., so I may as well be another one.

I used my 6.0 gator once just to compare it to the 5.3 blade pro. I had them both rigged up on the beach. The 5.3 planned earlier

it is logical that in 2016 my most used board was a Mistral Equipe II XR carbon - about 75% of 23 sessions
also logical the most used sail is HotSailsMaui SpeedFreak 8.5 -- 85%
next most used is Maui Sails TR-6 8.4 race sail -- 9%
leaves NOT much for smaller 6.9 and larger 10-oh
8.x sails used on longboard in 20 kph winds and in 20-40 kph winds on JP SLW or slalom - thus MOST used sail range

I am 178 lbs , 5' 11" tall, attractive 39 year old fit male seeking a beautiful woman. Had to throw that part out their haaa. Anyway, been windsurfing for 13 years now. I Have a 2016 Naish Starship 115L board. Love to bump n jump every chance I get, and rip up the water with carving gybes, carve in and out of big chop, surfing down swells. Just did a session this summer for the first time at Hood River Or. and loved it. It was blowing 21-28 MPH that day. I was passing everyone that day on the water. This is the best board I ever had. It shreds out their. I was on my 5.3 sail hauling a**. I want to move their eventually. Did 53 plaining sessions this season, and sad that the season is over. 3-4 more months until the 2017 season kicks off. Can't wait to full fill my addiction again. In the meantime, I will windskate, then when the snow hits, I will windski, then get back to windsurfing in 2017.

I haven't kept an accurate record – but I know which sail sizes wear out first here.
I live in a windy place, and my most-used sails are now a 4.4 and a 4.8. On lighter days I have a 5.0 for blasting or a 5.3 which is my get-going-in-marginal-wind sail.
When the gales and storms come, I have a 4m and a 3.7 and a 3.3, but these are winter sails in the UK.
In Cape Town, where I go in January and February, we use the 4.8s, 4.4s and 4m rigs a lot. A 5.m rig gets you out earlier, but you then need to change down pretty soon.
If someone said to me: 'You can only keep one size sail' then it would have to be the 4.8, as that would get me sailing the most.
I can't put percentages on these sail sizes. I also have a 5.3, a 5.0, and a 4.8, so that means each is used less than the 4.4.
This is my honest answer. No bs.
At 73-75kgs I only used my 5m RRD Vogue with my 87L Starboard Quad 100%
My 4.2m, 4.5m, 5.7m and my 74L Starboard Quad never got used.

Interesting topic! I moved from WA to Wellington, NZ about 9 years ago (don't ask). In WA, my main sails were 6.5 (slalom ) and 5.2 (wave).
In windy Wellington, I am only wavesailing now. I have a 5.3, 5.0, 4.5 and 4.0. Here's my rough breakdown:
5.3 5%
5.0 5%
4.5 50%
4.0 40%
That is averaged over around 30 sessions per year.
