I've always liked my Pyro 105 as either a twin or a quad but never as a thruster. I suspect it's partly personal style and partly tuning. Cross onshore I find the worst, I have no problem keeping speed in the bottom turn set up as a twin, but when I switch to thruster I just can't keep up speed in the bottom turn. Board feels loose enough so maybe I should separate the fins more?
Or just stick to twin?
thruster increases lift and drives nose down. If twin feels good, try moving base back a bit as thruster? I know boards where 10mm either way killed it

What size thrusters / main fin do you use?
11 cm thrusters and 21 cm center.
On the Fanatic TriWaves I found I needed 15 cm thrusters for it to work well. I tried the 113 Pyro with the stock 11cm side fins and a a 22 Maui Ultra Fin centre. Probably not the best pairing but I found little to no advantage over just using the quad setup. Could be my body weight and riding style of course.
I use a single 23cm for 105L and 63cm. Speed was not an issue, well it was actually, too much of it! Only for small waves.
Maybe you want to downside slightly the center with a 19cm or lower the side bites?
Should be about 2 fingers apart. Try extremes, move single all the way forward.

The 21cm center fin practically makes the board behave as a single fin, so it is not surprising you feel a huge difference to the quad or twin setup. As has been mentioned by others, when the power of the fin cluster get more rearward oriented, like with a relatively large center fin, the nose of the board will be pushed up a bit. But in your case, the size of the center fin will also radically affect the rail to rail reaction of the board. With such a big fin, the board will enter the turn much slower and the whole turn need to be set up in a very different manner. If you want to pursue the thruster setup, I'd look for a center fin around 17, possibly 18 for the size of board.
