Pizza is "I am pissed" food. It is "fast food" with what takes your fancy on it.

Home made base - tossers. You can buy pre-made bases, make dough in a breadmaker, whatever, the base will taste essentially the same it is farken bread.


I think I'd HAVE to be pissed to eat one of your $2 frozen jobs, the bases are like a bit of cardboard , the box they came in probly tastes better.
You obviously have never had a proper pizza before if you think your $2 frozen jobs, with stuff thrown on top, is as good as a REAL pizza made on a proper base .

Of course I jest.

I still think that for a quick n easy meal the cheapies are an OK base (that's why I said "and be done with it")

But really I do think that if making a real pizza the effort into homemade dough is a bit wasted. Some people act like their dough is so good and you'd struggle to tell the difference when topped.

But pretty sure there is a fair bit of snobbishness in this pizza oven and homemade bases also.

Gotta have a behemoth pizza oven to be real, using organic tritcale flour crushed in a 300y/o mill by horse drawn cogs. Don't forget the 60" TV

I think fine dinning at markies would be emu bitter in a stubbie cooler and a microwaved frozen pie, but with extra sauce to make it fancy, listening to his transistor radio lol.

^^^ Sounds like I am more irresistible than pizza to some folk.

You miss the point Loto - am not against gourmet or nice things, quite the opposite. I just think there is a lot of wank and it starts to sounds a bit like the wine tasting crowd. The base needs to be good and my frozen thing is an exaggeration but I bet we could get the top few dough recipes and once topped and cooked nobody would really have a preference.
But you knew all that and just wanted to have a shot like usual.
Offer your opinion about pizza instead of you opinion about me perhaps?

I actually worked at the pizza shop in the world when I was a young'un.
I'll be trying Gorgo's stuff

Emu export would have to be one of the best beers going. And very hard to get in Qld a as owned by lion Nathan and a direct competitor to nectar (xxxx)

I've always found the quality of the pizza is directly proportional to the amount of alcohol consumed prior eating.

And any pizza shop that sells a 'Supreme Pizza' without anchovies, should be run out of town for false advertising. It's an absolute disgrace having to ask to have anchovies put on a supreme.

Now there is a problem!

Pizza bases, I just use flat breads, and keep the toppings to a minimum. And use a pizza stone, I would like a Pizza oven proper but the normal oven is OK.

That's why dining out is special.

Getting pizza once with my lesbo sister in law reckoned she didn't like anchovies. I told her she must like anchovies because she was a lesbo and got them on the pizza anyway.

thanks some great tips above ,i will try.

myself I've found the Webba family Q and pizza stone makes great Pizzas.

i don't use metal pans just flour the stone and place the pizza straight on the stone,more flavour with a crisp base that doesn't fold
but soft to eat.
When I've used metal bases, even if i spread olive oil over it,it was like eating a chunk of biscuit or pork crackle or soft undercooke yank slop.

anyhow I've found this stuff makes fast and perfect pizza sauce




for extra ring sting when no birds eye chills about,this is the bomb




also I've used cream cheese instead of bocconcini
IMO it has a better flavour with a nice salty taste ,i find bocconcini bland and a waist if you're only making 1 pizza once a week.

i do love homemade sauce and homemade base and admire the passion you blokes have for the craft.
i think I'm lazy and lack the confidence + lot of effort for 1or 2 pizzas.

Thin base
Rich tomato
Feta
Olives
Basil leaves
Drizzle of olive oil or garlic chilli fused olive oil and cracked pepper
Woodfired oven is essential
