Sir your breakfast looks very legit in the first photo. My morning meals are exactly like that, with a strong black coffee following it. I can't eat fried stuff in the morning myself.
However I am not soo sure about that brown pulp in the second photo.

its just the fruit and leaves blended in water with almond and flax seeds. Skipped the kale this morning.
I enjoy a strong cup black coffee freshly ground first up.

Ive been eating like this for a long time but cut out meat, dairy and bread a couple of months ago. It takes some work to figure out what to eat but it is very doable. I only ate a little chicken and fish occasionally so I don't really miss it.
Read the book, How not to die, by Michael Gregor. You can download it from the library free. I'm retired at 68 but walk 5k most days and surf whenever conditions are good. I do have scoop of whey powder occasionally in a banana smoothie.

I have been eating stuff like that for decades. It's easy and cheap.
Add in some quality red meat from time to time, because I can, a bit of chicken or fish and you're good to go.
It's easy because you just buy a bunch of veges, chop them up, cook them a bit, flavour it with chilli and garlic and whatever, and eat it.
I also like curry powder, coconut milk, peanut paste (butter), various soy and fish sauces. Mint, nuts and lemon juice is good too.
It doesn't matter how you cook them, or even if you cook them at all. My most used cooking device is the microwave. You can do great curries and "stir fry-like" cooking in the microwave.
If you eat mainly good cheap stuff then you can afford better quality cuts of meat and enjoy it more. You can also occasionally pig out on other stuff like cakes, pancakes and fish and chips because your primary diet is so good.
When you consider the vast majority of the world population eat like this (Asia, India, Middle-east, Islands), and a lot of those people are poor, then it's a piss poor excuse to say it is hard to do or expensive.
The only problem with eating all this good stuff is you get less tolerant of the crap served up in a lot of eateries. I would shut down all the fast food chains and mass produced food purveyors in a second.
PS I just turned 60. My test results (blood pressure, weight, cholesterol, etc) are off the scale at the good end. I just kite every day and go for the occasional walk with the missus. Life's too short to knock yourself doing dumb exercises when there's so much play to be had.
For about 10 years now I have been making a disgusting shake, every 12 days I make up two blenders full then blend one up, divide it into two pitchers then add quinoa and kale salad mix to one which lasts three days. It basically has everything healthy in it for you, carrots, fruits, flax seeds, protein powder etc.. I spend 15 minutes choking it down each morning, usually about 24 ounces worth. I feel this gives me the freedom to indulge in other foods that might not be the best if eaten on their own such as steaks, beer, cheeseburgers, bbq ribs, etc...

I have kinda tried to go meat free two days a week before (trying to do 5:2 diet, and making the 2 meat free)
spins me out just how meat orientated my diet is and how hard it is to change the mental side of cooking. Before its just what meat and then what veg/ salad goes with it..

Just putting the Question out there..does eating a plant based diet make you more exposed to chemicals & sprays ..a lot of supermarket food is imported and the with holding periods for chemicals applied to food cannot be audited ..also i'm surprised that no one has mentioned Roo meat which is on of the best meat available being low in fat and high in iron & zinc ..

Just a little soy sauce oregano cummin seed salt and pepper. If you want more than that add a little soy milk or coconut cream honey and peanut butter curry powder or even a little oyster sauce. I generally cook with coconut oil but only small amounts.
For me its just veggies and red lentils (vegan)but you can add a little chopped chicken or meat. You could use bought no added salt stock

Queensland and WA are definitely good, but I don't know why you keep losing your paddles over there. Possibly poor nutrition due to overcooking your kale
The good beacon and eggs brekkie makes me eat less for the rest of the day.
The problem with the "healthy" brekkies is that you go back to hungry after about an hour.
